I just stick my hand in front of the shells as the barrel is opening - you can catch the shells as they are ejected (or bat them down). Took me a little time to get it right. I nailed a bunch of people waiting behind me at my first sporting clays tournament before I learned this trick  Not sure if you can change them ... a good gunsmith might but I'm sure you realize most people want ejectors so it might hurt resale (if it matters).

I was once told that you can send the shotgun to Ruger and for approx. $25 they will disable the automatic safety and remove the spring to make the ejectors into extractors. Don't hold me to this, but give ruger a call.
