I have seen a reference to this: "My Citori has the 1911 mod on the ejectors."

What exactly is this, and what does it do ?

It refers to the replacement of the Citori ejector springs with a spring from the 1911 (probably the recoil spring of 1911). It converts the Citori from ejectors to extractors.

The 1911 firing pin spring, not recoil spring. This also helps in preventing ejector pin breakage some Citori's are known for.
