Hey Mr Muller,
today i was invited to a driven partridge course. I took with me my trusty 682 gold E with U1-U3 stainless steel. Shot a lot of 36gr (1 2/7) shells No6.

would these damage the chokes in any way?

Definitely not. Those Stainless Chokes are harder than your barrels and can withstand any shotshell made.
Go ahead and shoot anything you want thru them.
My SS and H20 Hunting series have no limits.
