Joe Hunter, I agree, I do not really care for Dove, Snipe or Woodcock as far as eating goes. Give me a Grouse or Quail any time, to me even a stocked Pheasant taste better than Dove, Snipe or Woodcock. However my good friend Cpt Boyce and his wife eat as many Woodcock as I can gun. I can't comment on woodcock, but dove and snipe are very tasty when cooked on the grill. Of course, the light-meat birds (quail, pheasant, ruff grouse, and even huns) are all pretty tasty. Don't pass on the prairie grouse (sharp-tailed, and prairie chickens) though, they have a mild dark meat.

Everybody has their favorites & some game is rated as more palatable than others. However, game, like all varieties of meat, has unique characteristics that are specific to individual species which respond favorably to different cooking methods. Generally, fatty meat is prepared differently than lean meat & so on. I have yet to see any game animal or fish that a good chief can't turn into an enjoyable meal!
