This is one of my favorite rabbit recipes. I've used snowshoe hares too, but I like it a little better with cottontails.

You will need: 1 rabbit, cleaned and quartered. (backstraps too)
1 medium onion, chopped.
1 medium potato, cubed.
1-14 oz. can whole kernel corn, drained.
1-14 oz. can lima beans, drained.
1-14 oz. can crushed tomatos, undrained.

Put your rabbit in a four qt. kettle with three quarts water, onion, salt and pepper. Bring to a boil, reduce heat, cover and simmer for an hour. Remove the rabbit, pull the meat off the bones into bite sized pieces. (Don't burn your fingers) Put the meat back into the kettle and add the corn, beans, (I only use half of the beans in mine) potato and tomato. Cover and simmer for another twenty minutes, or until the potatoes are tender. Add more salt and pepper to taste and enjoy.
