Grab the bird flip it over
Right hand put your middle finger in the craw in the slot of the breast and thumb under the point at the bottom of the breast.
Left hand punch hole thru the skin at the bottom of the breast where your right thumb is and peel back feather and skin exposing the breast meat. Now move left hand opposing the right hand in pretty much the same place putting your left thumb between the legs.and push the left thumb under the breast all the way into the diaphram until you pin the heart underneath that thumb. Now tear the breast away from the rest of the bird. In your right hand should be breast and wings in your left should everything else. Throw away everything in your left hand. Now get all the skin and feathers peeled all the way back until you expose the shoulder, grab a pair of kitchen shears at cut at the shoulder. Throw wings away. Now you should have a nice little heart shaped breast. Throw about 6 per pak and vacuum seal them, throw them in the freezer.

OR heres another way. Grab the bird pinch off the head at the shoulders. With the bird upright and its back to you, grab a wing and you can break it with your fingers close to the shoulder, do the same to the other wing. Flip the bird over, and search for its anal cavity with you thumb. Upon locating it , insert thumb and as you push in, make sure you can feel the innards in front of the thumb(against the nail) and the breast will be under your thumb. Then slowly seperate the breast from the body by pulling / splitting it apart. Throw away the rest of the bird in the left hand, the breast will be in the right hand. On the edge of the breast, grab the skin and tug it with the feathers and it should kinda' roll off the breast, like a wrapper off a candy bar... then clean with water. 8)

Some states require that a wing be left on the breast during transport for identification. Not sure about your regs, but you should check into this so as to ensure compliance with your states regulations.

BTW with practice you can clean a dove in about 20-30 secs.

Another way, though I'm trying to figure out if it's easier or harder than two methods posted above. Here's how I do it.
1. Pull all the feathers off the breast.
2. Pull the skin back/off of the breast.
3. Pull breast away from cavity by sticking your thumb under the breast (from the bottom) and pulling up.
4. Using kitchen shears clip breast at each wing joint.

We need a video don't we?

I do much the same as shotgunworld (Must be an Alabama thing) with a little different sequence.

1. Grab one wing and twist it off. Then twist the other one off.
2. Pull breast away from cavity by sticking your thumb under the breast bottom and pulling up.
3. Pull the skin off of the breast.

By first twisting the wings off, all the cartledge and tendons are torn away and the breast just pops out. You can clean a bird in 30 sec.
