Savage 312 over under.

I just bought a Savage 312 12 ga. over under with screw in chokes, good wood, nice shape paid $500.00

Did I get hosed? or is it a good value?

Here are the Blue Book 98% values (that's usually about what a "real nice" gun sells for)

Field Grade - 26" or 28" barrels, choke tubes - $520
Trap Grade - 30" barrels, Monte Carlo stock, recoil pad - $550
Sporting Clays - 28" barrels, 7 choke tubes supplied, recoil pad - $530

Looks like you didn't steal it, but you didn't take a shot in the shorts, either.
