The Zoli's are great guns especially considering their modest price. They handle great, have soft felt recoil and are very reliable. I would get a 32".

Yes, firing pins can be changed by the owner.

Go to Zoli USA website to get specs and down load the catalog which has optional stocks shown.
For trap and doubles I would get and adjustable comb to arrive at your desired POI.

Not a trap shooter but every single time i shoot my Z gun (mine is a mid rib) i think 'holy crap what a nice gun'. crazy soft shooting, beautiful wood, beautiful finishes, lockup feel/sound is very, very Perazzi-esque.

If they fit you i can't imagine a better way to spend $6-8k.
